Walnut Potato Squares
1 cup sunflower seeds
1 cup cooked brown rice
2 cups grated potato
1 cup walnuts
2 tbsp. nutritional yeast flakes
1 large onion finely diced
1 tsp. celtic sea salt
Place nuts and seeds in food processor and process coarsely.
Place all ingredients in a bowl and mix. Add enough soy milk to moisten, adding it a little at a time. You want the mixture to be "tacky" and hold together when pressed, not swimming in liquid, so it stays firm enough to slice.
Line a cookie tray or dish with baking paper and spread mixture evenly over tray or dish.
Bake in moderate oven at 180°C for approx. 1 hour.
Cut into squares and serve with steamed vegetables and/or a fresh crispy salad.
