Three Bean Salad
1 cup cooked chickpeas
1 cup cooked slice green beans
1 cup cooked kidney beans
¼ cup chopped green onions
¼ cup chopped green capsicum
½ tsp. sweet basil or oregano
½ cup fresh lemon juice
Combine all ingredients and mix well. Place in an airtight container and leave in the refrigerator overnight. Serve chilled on a bed of lettuce. Serves 6.
