Sweet Corn Chowder
3 cups water
2 cups sweet potato diced
½ cup celery chopped
2 cups corn kernels
1 onion chopped
1 tsp. Massel vegetable stock powder
½ cup raw cashews
2 tbsp arrowroot
2 cups water
1 tsp. celtic salt
1 tsp. parsley
In 3 cups of water simmer sweet potatoes and onion till tender.
Add celery and corn and continue to simmer.
Blend cashews, arrowroot, parsley and seasonings in 2 cups of water until smooth.
Add this mixture to the vegetables and heat thoroughly till it thickens.
Serve with crusty wholemeal bread.
