Pumpkin Soup
1 medium pumpkin cut into chunks
1 leek or onion
1 tbsp. Massel Vegetable Stock Powder
2 x 400gm tins Tomatoes
2 tins water (use tomato tins)
1 tsp. dried ginger (or to taste)
½ tsp. dried garlic (or to taste)
Place all ingredients in saucepan and cook until tender. Put contents through blender until smooth. Serves approx. 6-8.
