Pasta Salad
250g wheat OR gluten free pasta, cooked
½ cup stuffed green olives
1 cucumber cubed
juice of 1 lemon
1 red capsicum diced
1 zucchini cubed
pineapple pieces (optional)
1 carrot cut in small slithers
corn kernels (optional)
2 tbsp. olive oil
salt to taste
Toss with small amount of olive oil and serve chilled.
