Hummus
2 cups cooked chick peas
2 tbsp. Tahini
3 tbsp. lemon juice
2 cloves garlic crushed
¼ tsp. ground cumin or paprika
celtic sea salt to taste (optional)
1 tbsp. chopped parsley (optional)
¼ cup water
Drain chick peas. Combine in food processor the tahini and lemon juice and blend for about a minute. Add the chick peas, garlic, cumin or paprika.
Blend, adding the water if needed, until mixture is smooth and the desired consistency for either a dip or spread.
Cooked pumpkin can be substituted for the water giving a different but very nice flavour. Season to taste with salt if desired. Serve chilled and garnish with parsley sprigs.
