Golden Wassail

1 litre apple juice

1 litre unsweetened pineapple juice

1 cup unsweetened apricot nectur

1 cup orange juice

¼ tsp. cardamom

½ tsp. coriander

Simmer all ingredients in a large saucepan for 5-10 minutes to allow spices to 'bloom.'

Serve hot garnished with slices of orange or mint leaves.

Serves 10.
