Carob Crunch
¾ cup honey
1 cup peanut butter
1 tsp. vanilla (optional)
½ cup carob powder
½ cup sunflower seeds
½ cup sesame seeds
1 cup chopped walnuts or brazil
1 cup chopped almonds
Slightly warm honey and mix with peanut butter and vanilla.
Add carob powder, a little at a time, until well blended.
Add remaining ingredients, a little at a time, stirring until well mixed.
This can be quite stiff to stir which is normal.
Put onto a cookie tray lined with multibake paper, place another sheet of paper on top and roll out until approx. ¾-1cm thick.
Remove top sheet of paper. Place in freezer.
Halve the ingredients for a smaller batch.
Cut into bite size pieces and serve straight from the freezer.
Very rich and high in fat and calories. Only have as a special treat.
